Abstract

Cascara, kulit ceri kopi kering, telah menarik minat sebagai makanan fungsional potensial karena konsentrasi senyawa bioaktifnya yang kaya dan manfaat kesehatan yang terkait. Cascara mengandung kadar asam klorogenat, flavonoid, kafein, dan berbagai senyawa fenolik yang signifikan, yang telah dikaitkan dengan sifat antioksidan, anti-inflamasi, dan pengatur metabolisme. Selain itu, cascara mengandung serat larut yang meningkatkan kesehatan usus dengan meningkatkan pencernaan dan bertindak sebagai prebiotik, yang mendorong mikrobioma usus yang seimbang. Penelitian-penelitian mengenai pemanfaatan cascara, khususnya dalam pembuatan minuman seperti kombucha cascara, menyoroti keserbagunaannya sebagai bahan makanan fungsional. Proses fermentasi ini tidak hanya meningkatkan ketersediaan hayati senyawa-senyawa bermanfaatnya, tetapi juga menciptakan profil rasa yang unik, menarik bagi konsumen yang peduli kesehatan. Selain itu, aspek keberlanjutan dalam memanfaatkan cascara, produk sampingan dari pengolahan kopi, berkontribusi pada pengurangan limbah dalam industri kopi sekaligus memberikan nilai gizi. Meningkatnya minat pada produk alami dan peningkat kesehatan membuka jalan baru bagi cascara, menekankan potensi perannya dalam strategi kesehatan preventif. Dengan demikian, cascara merupakan tambahan yang berharga bagi praktik diet, menawarkan manfaat lingkungan dan sifat-sifat yang signifikan untuk meningkatkan kesehatan. Oleh karena itu,  cascara muncul sebagai kandidat yang menjanjikan untuk eksplorasi lebih lanjut dalam penelitian klinis dan nutrisi, yang memerlukan minat lebih besar untuk aplikasinya dalam meningkatkan kesehatan masyarakat,
